Working for Outside Catering today, reporting at 7am.. Damn so long never work 7am. Need to take own transport and wake up the same time as thou I'm working 6am.
The quiet Citylink and Marina Square
How often you get to walk along MS and Citylink with only a handful of people in it. **If you able to notice it, there is always 2 person in front of me in the pictures. They are the Foo Brothers, didn't catch up with them as I'm too tired to talk in the morning.
We left Ritz at 720am and reached Habourfront to prepare to load our stuffs onto the ferry. Guess whats the ferry? Its Island Jade from Penguin! Sounds familiar to army boys? The very ferry that ferried your parents to see your POP!! There goes the idea of getting on an luxurious yacht...
Upon entering the yacht, its as thou returning back to army. The stagnant smell of smelly soldiers who knocked out immediately when seated in the ferry. Morale damn low, Foo brothers felt cheated until they told us that we are working for the Volvo Ocean Race. Although we don't know anything about this race, but it is certainly a boasting events for us to talk about when we return.
We had some free time, exploring the ferry to familiarized with the new working environment. And there goes our cam whores and gigs running around taking group pictures and self portraits.

We managed to settle all the setup by 1015. Actually there is nothing much to do. Only need to lay the table cloths on all the tables inside, chips & nuts and ash tray. The most busy are the stewarding and bar people. They got the most equipment. While they are busy, Shaik then gives us our briefing a the top of the ferry on the staffing and the area in charge.
F&B for such function is pretty predictable further more we had helped with the moving of beverage. For such function, Food is usually butler passed canopy, while Beverage sure will have soft drinks. Only need to make sure there is beer, wines and other juices. Canopy don't bother knowing them so early as before we serve, we are again briefed by the chefs the ingredients and food name. Next important in briefing is the time schedule. But all knows how to read BEO and we will always be reminded when a next event is coming up. All just need to have good communication and being alert can liao. Will all regulars, this variable is easily being factor out.

Ferry consist of 3 deck, 2 required at each deck.
Total of 2 races to view. 130pm and 230pm slots.
Canopy should be served before each race.
EASY RIGHT!!
We set off to pick up the guests near Habourfront at 11am and proceed to East Coast Park to view the race. At East Coast Park, we are just 1km away from the shore, you can see the sea is choppy and windy is strong. Cant imagine that i had did my OSIM Triathlon is such condition. (But not that far away from shore la)
During the first race, everyone is still fit and strong, mostly went up to top deck and 2nd deck to view the boats. While only a handful are already knocked out by the sea sick, laying inside the deck to sleep.
As the guests are busy snapping pictures, SAME FOR THE STAFFS!!! Its like a self proclaimed stoppage by us. Leaving maybe only 2 staffs for the top and 2nd deck. Guest are so busy with viewing the race, that our existence is ignored.
Poor guy.

After the first race, most of the guest back to be seated and resume of our 'service'.. Few of us now take turns to man our area and rest at the 'back area'

Hmm seems like quite quiet around here... Only a few continue to watch the race, some chatting at their area and majority suffering from sea sick. Good news to us, less service.. haha! We ensure all guest are served with drinks. Those knock out by sea sick are offered with ginger water, however they are in deep thoughts by then.
Most of use still manning our area, however chatting at our own corner. Time to time ensure guests drinks are being cleared and offered again. Majority by now suffering from sea sick. No appetite for drinks or food.
While I'm doing clearing, i got a $10 tips from this China Guest!!! Woah better than Kelly (new name for Kaili) during Christmas.

Night event at M9, for the same guests for the Outside Catering. Chinese set dinner, with extra 1 course. Yu Seng, Chinese traditional dish prior to the first course. ITS TABLE SERVICE!! For every ingredient we pour in we have to say an auspicious phrase in ENGLISH!! I managed to memorize both Chinese and English version, hence recited both to the Guests.

Plum Sauce: House full of Gold and Jade, 金玉满堂
Spices and pepper: Good Luck from Bottom to Top, 红运当头

Crackers: Gold found everywhere, 遍地黄金
These guests started to left the place before the 8th dish, noodles are served. By 9th course, desserts left only a handful of them. By the time we clear the area is 1130, so i slacked for half an hour before returning back to Ballroom.
Back to Ballroom at 12mn, everything is done by the 12mn staffs again.. Only left clearing up of area and setting up coffee station at Grand Gallery. Had almost an hour break then back to work. Just nice, finish OT at 2am... During break, got a free drink from Kelly which i disturbed her for quite some time for the tips.
